So a friend of mine and I created a wonderful dish for fourth of July. It started when her boyfriend brought home a meal that was to good to pass up to learn, bacon mac n' cheese. So we put our creative heads together and came up with our own version. Needless to say it was a hit right off the bat. Super easy to make, cheap to get items for and easy peasy 15-20 minutes bake time.

Cook bacon to a nice crisp texture (keep in mind it will cook some more in the oven) Then place on a tray with paper towel to absorb extra grease. Chop into tiny pieces when cooled. When draining grease leave just a little to saute' mushrooms in.
Next cook the noodles of the mac n' cheese while the mushrooms are simmering. When done drain and pour noodles into the baking dish. Add butter or a little virgin olive oil. Next you're going to grate cheese in layers as you stir noodles. Add chopped bacon and mushrooms. Add one more layer of cheese and place into over for 5-10 minutes, or until cheese layers are gooey. While that's in the oven chop basil and chives. When the dish is done heating take out the oven and stir in chives and basil. Add some garnish and voila you are good to go.
